Taco Soup Recipe

Ingredients:

  • 28 oz. can diced tomatoes
  • 14 oz. can beans (pinto, kidney or black beans)
  • 10 oz. can of corn
  • 4 oz. tomato paste
  • 1 chopped onion
  • 1 lb. cooked ground beef
  • 1 packet taco seasoning (or make your own!)

Instructions:

Combine all ingredients in the crockpot (even the juices from all canned ingredients). Cook on low for 6-8 hours or on high for 4 hours. Serve with shredded cheese, tortilla chips (or Fritos) and/or sour cream. Enjoy!

Honey Chicken Recipe 

Sauce:

  • 1/4 t. curry powder
  • 1/4 t. powdered ginger
  • 1/4 t. nutmeg
  • 1/4 t. paprika
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. cinnamon
  • 3 T. oil
  • 1/4 cup honey
  • 1/2 cup water
  • 1/2 cup fresh parsley (or some dried parsley, or leave it out)

Instructions:

  1. Whisk together sauce ingredients.
  2. Pour over 1 1b. chicken breasts, 1 chopped onion, and chopped veggies (I like sweet potatoes) in the crockpot.
  3. Cook on low for 4 hours.
  4. Serve over rice.
  5. Enjoy!
